Making a Large Sheet Cake

Cut a board 28 x 28".  Cover Board with Foil.  Measure the cake.  (Sometimes, cakes will be slightly smaller than pan size.)  Cut and place pieces of waxed paper on the board, so that the waxed paper measures the same diamensions as the cake when the is pieced together.  Tape the pieces together.   Turn the waxed paper over and put some double-sided tape on it.  Pick up the waxed paper, turn it over and secure it to the cake board. 

Bake 6, 12 x 18" cakes.  Let cool completely.

Place two of the cakes next to each other and touching as shown in the picture.  Cut one of the cakes in half and in half again.  Put the first half in place as shown in the picture.  Cut the remaining half of the cake into pieces to fit into place as shown in the picture.

Make buttercream frosting and frost the pieces of cake.  Cut the remaining 3 cakes to fit into place as described, above.

Note:  For some, strange reason, my second layer of cake pieces was different than the first.  And, I had cake leftover!  Therefore, if your cake pieces differ from my cut pieces, do not be concerned.  Just measure with a ruler as you "go along" cutting the pieces to fit the desired measurements of the sheet cake.

After placing the top layer of cake pieces, frost the entire cake.  Let sit for 20-30 minutes to begin forming a crust.  Place paper towels on top and gently smooth with the fingers so that the flaws in the frosting will "smooth" into the icing.  I prefer using a paper towel with texture to get a nice, soft design on the cake.

Once the cake has been frosted and the frosting smoothed, use a toothpick and draw the hill.  Use a small, metal spatula to add the green frosting to the hill area and to make the area "rough" to give a effect.

The next step is to make the roses.  Start on the left with buds and make the next one a bit bigger.  Pipe the third bud larger than the second one.

As you add flowers to the right of the last flower placed on the cake, make each one bigger.  Add the green leaves.

Now, you are ready to add Happy Birthday.  Then, add:  "You Bloom With Age".  Add the name of the person.  And, finally, add, in green frosting:  ".....Over The Hill..... and "The Big 50".
