Marshmallows on a Lollipop Stick

Place four marshmallows on a large lollipop stick.  Dip into melted chocolate.  Remove from the chocolate and carefully shake to remove the excess chocolate.  Sprinkle candy sprinkles, nonpareils or any other similar candy items on "wet chocolate".  Lay coated lollipop on a sheet of waxed paper to solidify.

Place the number desired of marshmallows onto a lollipop stick.  Dip into melted chocolate.  Remove from the chocolate and carefully shake to remove the excess chocolate.  Dip a spoon into melted, white chocolate.  Lift the spoon up out of the chocolate and let some of the chocolate drizzle onto various section of the coated marshmallows and turn the lollipop stick as you drizzle in to to place the white, melted chocolate over various sections of the chocolate coated marshmallow lollipop.  Continue doing with the colors of your choice.  White does not have to be used nor be used as the first color to drizzle.

For the single lollipop, dip the head into the desired melted chocolate (white, peanut butter, semi-sweet, milk, etc.), and continue dipping this until entirely coated.  Remove from the chocolate and carefully shake to remove the excess chocolate.  Dip the top of the marshmallow into a bowl of the candy decoration of your choice.  Remove and place the bottom of the lollipop stick into Styrofoam to solidify.  Chopped nuts or any other edible decoration may be used.


 
 
Marshmallows for Candy Boxes or Gift Trays
Hold the marshmallow in one hand and dip the marshmallow so that 1/2 of the marshmallow is covered with chocolate.  Set the marshmallow on a waxed-paper lined cookie sheet or  sheet cake pan.  Let solidify.  Hold the marshmallow in one hand on the part that has been coated with chocolate.  Dip the chocolate so that all of the remaining marshmallow is now coated. Shake off the excess or scrape the marshmallow top with the edge of the bowl to remove the excess chocolate.  Dip the top of the marshmallow in sprinkles or nuts of choice.  Set the marshmallow on a waxed-paper lined cookie sheet or large sheet cake pan.  Let solidify.  Marshmallow do not have to be topped with sprinkles.  Just let the chocolate solidify and then drizzle with chocolate of another flavor.  Example as shown in picture to the left.

 
 
Chocolate Clusters
I do not measure amounts.  I usually use the left-over chocolate compound (purchased in cake or candy shops) from molding candy pieces.  Place any one or any combination of the items listed, below,  in the bowl, stir to blend and drop by teaspoonfuls onto a waxed-paper-covered cookie sheet to solidify.  Add candy decorations while the chocolate is still "wet".  (Note:  If I use nuts in the cluster, I then would place the same type of nut(s) on the cluster for identification and decoration.)  Marshmallows, nuts, raisins, coconut, rice crispies, broken pretzels,  candied fruit,  broken up pieces of Oreo cookies, potato chips, etc.  If using peanut butter or butter scotch chips, be sure the melted chocolate used for the clusters is warm; not too warm, so that the chips only might melt slightly.  Place some of the candy chips on top for decorations.  And, use some colored sugar or sprinkles as an added decoration.

 
 
Solid Chocolate Candy Pieces with Decorations
I do not measure amounts.  I usually use the left-over chocolate compound (purchased in cake or candy shops) from molding candy pieces.  Use a teaspoon and drop equal amounts of chocolate onto a waxed-paper lined cookie sheet or sheet cake pan.  Before the chocolate has a chance to set, sprinkle the edible decorations onto the top of the candy pieces. 

These are nice on a candy or cookie tray with other varieties of sweet goodies.


 
 
Chocolate Covered Graham Crackers - Design by Diane Shavkin NY
Separate the graham crackers in half with a sharp knife.  Dip the lollipop stick into the melted chocolate and attach to the back of the graham cracker.  Do all that you plan to do.  Let them solidify.  Hold the lollipop stick in the hand and dip the graham cracker into the melted chocolate until completely coated.  Remove excess by swirling carefully in the hand and/or scraping it gently over the top edge of the bowl.  Dip the top of the graham cracker into chocolate sprinkles to resemble hair.  Place on waxed-paper lined cookie sheet or sheet cake pan.  Let solidify.  Bring a melted bulb of white chocolate over to the face of the coated graham cracker and shape into the "white of the eye".  Do the same with blue, tinted white chocolate.  Follow same procedure for the nose and mouth.

The Basics:  Use a small, metal spatula and carefully separate the cookie by removing the top half of the "sandwich".  Dip a lollipop stick into melted chocolate and place of the top of the bottom part of the "sandwich cookie".  Place the top half of the "sandwich" back into place and let solidify.  Do this to all the cookies that are being used for lollipop sandwich cookies.

Follow the basic instructions above.  Hold the lollipop stick in the hand and dip the Oreo or any type of sandwich cookie into the desired melted chocolate.  Lay the cookie pop on a waxed-paper-covered cookie sheet.  Place the decorations on the face of the dipped cookie while the chocolate is still "wet".

Follow the basic instructions above.  Make two white circles for the eyes by dipping the artist's brush into the white, melted chocolate and by bringing the bulb of chocolate over to the chocolate dipped cookie.  Carefully, let the bulb touch the cookie.  Keep the artist brush in this bulb and move the brush to form the shape desired.  Let solidify and do the same for the pupil of the eye.  This same technique is used for the colored hair and the beak of the "fantasy bird".

Follow the basic instructions above.  Dip "Nutter Butter" cookies into melted chocolate.  Carefully, shake to remove excess while dipped cookie is still over the bowl of melted chocolate.  Dip the "head" of the cookie into the desired sprinkles for the "hair".  Place on waxed paper cookie sheets to solidify.  Put the candy decorations to form the face into place (M&M's for the eyes and nose; slivered almonds for the mouth).

For Halloween, dip the cookie into melted, white chocolate and add chocolate chips for the eyes.


 
 
Chocolate Covered Pretzels

Hold the pretzel rod in your hand and dip the tip of the pretzel into the melted, white chocolate until it covers as much of the pretzel rod as possible.  Lay the chocolate covered pretzel on a tray that has been covered with waxed paper.  When the chocolate has solidified, hold the pretzel rod in your hand.  Take  a spoon and dip it into the melted, milk chocolate (see picture).  Now, let the chocolate drip from the spoons and drizzle the chocolate back-and-forth to create a simulated, drizzle design.  The chocolate may be drizzled from the spoon right onto the pretzels as they lay in the tray.  Note:  In the picture the white chocolate covered pretzels are on waxed paper.  When the chocolate has been drizzled onto the white chocolate covered pretzel, the finished product is place onto a waxed paper covered tray to set.  When chocolate is set, three or four pretzels fit nicely in a lollipop bag.  Tie the bag with curly ribbon.  Red and Green drizzles make nice Christmas gifts either packaged or placed in a cookie or candy tray.

Chocolate Covered Pretzel Variations

Dip the pretzel rods as described, above.  Let solidify.  Hold the exposed pretzel part in your hand as you drizzle green and then red, tinted white chocolate over the coated area.  Sprinkles, as pictured, are applied before the chocolate solidifies. 

Mini pretzels are nice to add to a cookie or candy gift tray.  Dip the pretzels to coat them.  Lay the pretzels on waxed-paper lined cookie trays.  Before they solidify, add the sprinkles.  If you are to drizzle tinted, white chocolate colors over the pretzels, do so after the pretzels are solidified.
